Kombucha

Infusions of green, oolong, or black tea form the base; a SCOBY – a symbiotic culture of bacteria and yeast – first ferments the added sugar into alcohol, which acetic acid bacteria then further convert into organic acids. This process creates tension, acidity, and a fine, vibrant texture. The caffeine contained in the tea is lost during fermentation.

Depending on the style, a second fermentation uses a composition of fruits and their juices, herbs, hops or wood to add accents and sharpen the signature.

Fermentation doesn't have to be limited to tea: More and more producers are working with herbal infusions (tisanes), coffee, or even dealcoholized wine. This opens up new possibilities – unique and aromatically diverse.

OUR PERSPECTIVE

It is what it is: the must-have citrus fruit of current cuisine is the Japanese yuzu. And much like with matcha latte, I have to admit that these magic words can convince me to buy it too. Yuzu kombucha immediately piques my interest. It's incredible what this guy can conjure up from green tea and citrus fruits. For me, in its purest form, it's one of the best kombuchas. It's reminiscent of crazy natural wines, with a sharp acidity. A drink with many fans (it's served, among other places, at the Danish 3-Michelin-starred restaurant "Jordnaer"), produced in small batches in Copenhagen.

PRODUCTION

An aromatic brew is first prepared from green tea, dried mango, blackberry leaves, and Bourbon vanilla – floral safflower blossoms add a warm hue. The tea is then mixed with organic cane sugar and fermented with a kombucha culture. This culture converts the sugar into acid, creates fine carbonation, and integrates the fruit and vanilla notes. Finally, the kombucha is refined with yuzu juice.
