Founded in Copenhagen in 2020 by Christian Arensbak, these specialty beverages are created by the duo of sommelier Emilie Øst-Jacobsen and gastrophysicist Bram Kerkhof – influenced by haute cuisine and laboratory practice. Their goal: drinks with natural tannin tension, a dry finish, and a clear, defined character at the table.

Structure in layers

Arensbak works in kitchen-like steps: components are extracted separately, fermented under controlled conditions, and blended with precision. Maturation takes place in stainless steel. This process creates contour and length – still or with a fine perlage – always with a gastronomic focus.

Tea frame, oak contour, long draw

Select premium teas such as Oolong, Longjing, or Yunnan form the foundation of Proxy's teas. Depending on the line, secondary fermentations and botanical sets follow; oak adds further accents before the blend is completed with texture, acidity, and length. The result: compositions that carry an entire evening – from the first glass to the last course.
