AMA BREWERY

AMA Brewery originated in the Basque Country, in the culinary catchment area of the restaurant Mugaritz, famously known for their experimental and playful philosophy. There, they began working with tea-based fermentations and the idea of consistently applying Pét-Nat principles to tea – long before it became a separate category.

AMA is among the first producers to have achieved this level of precision in producing so-called Pet-Nat Teas: naturally occurring bubbles, structuring acidity, and a clear, culinary signature. After bottling, the cuvées mature in the bottle for several months to allow aromas to meld and tension to develop – time is an integral part of the flavor.
