Fruit blends are composed juice-based drinks – clearly structured, precisely balanced, and characterized by freshness and structure. Unlike fermented proxies, their complexity arises not from microbial processes, but from the art of blending.

At the heart of our wines are high-quality fruit juices, sourced exclusively from artisanal producers. These juices provide primary aromas – grape, citrus, or apple – and form the backbone of the composition. They are complemented by extracts of wood, herbs, or blossoms, and sometimes by subtle acidity enhancers or tinctures. This creates depth, complexity, and a long finish, without fermentation taking center stage.

Their structure can be still or finely sparkling, their mood ranges from aperitif to digestif.

OUR PERSPECTIVE

I can hardly drink enough of it. On the nose, the "Alp Jus" appears almost hearty, showing character like a good mountain cheese (and that is meant as an absolute high compliment). On the palate, it becomes distinctly more floral, reminiscent of the finest saffron and spicy honey. Not a dry drink, but in a tense balance with the acidity. I recently had a Bánh Mì sandwich with it, and that was a culinary fireworks display. Generally great with spicy and hot dishes, as well as with cheese.

PRODUCTION

For the Alp Jus Dandelion & Grape, grape juice and verjus are blended with a 24-hour herbal extract from the foothills of the Alps. The drink is then simply pasteurized to preserve it.

Alp Jus is a collaboration between restaurateur, award-winning chef, and winemaker Mike Nährer, who runs the restaurant of the same name in Rassing, and Traisental winemaker Tom Dockner. Together, they are also responsible for the "Forgotten Gardens" project.

With Alp Jus, they are now continuing their work in the field of non-alcoholic beverages – initial field tests have already attracted attention.
