In the Dolomites, a brewer, a scientist, and a wild herb gatherer combine their perspectives and expertise: Forgotten ingredients are transformed into reimagined beverages. FERAL – wild and untamed – represents the courage to leave familiar paths and bring the unexpected to the glass.
Lacto-fermentation, maceration, precision & innovation
FERAL doesn't ferment teas, but rather "humble ingredients" like white and red beets or birch sap using lactic acid fermentation – this creates complex aromas and a fine, supportive acidity. The ferments are then nuanced with macerated roots, spices, herbs, woods, and blossoms to sharpen texture, spice, and floral notes. In 2025, a lightly sparkling rosé, N° 5, was added to the range: birch sap as a base, accentuated by lemon verbena, yarrow, nettle, horseradish, and aronia juice – with a fine, persistent perlage.
Own category, clear texture
FERAL is a "botanical fermented" tea – a unique line beyond the usual categories. Herbal, spice, and woody notes meet fermentation depth and a calm tea structure. Each number has its own distinct character: from No. 1 (white beet, hops, Szechuan) to No. 4 (red beet, lavender, juniper) as quiet companions at the table; No. 5 adds a subtle vibrancy and a fine finish.
