Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story.

OUR PERSPECTIVE

The name "Cook The Mountain" is not just the title of N°6, but the concept behind this Italian wine proxy. Created in collaboration with Atelier Moessmer by Norbert Niederkofler (3 Michelin stars), it follows the idea of ​​using only ingredients that can grow in the Alps – a direct translation of Alpine cuisine into a glass. That's precisely why it's called that: not "mountain" as an aroma, but "mountain" as a rule of origin.

Mountain pine and juniper provide the resinous, cool forest notes. Linden blossom and linden honey lend a bright, floral warmth. Sage and mint define the green character. Fennel seed adds a subtle aniseed freshness. A hint of chili lingers as a delicate, typical Feral finish. The whole is supported by fermented white beet as a quiet base – which is given a fine acidity with verjus.

Feral - no. 6 BEHIND THE SCENE'S

PRODUCTION

The base is fermented white beet juice, which provides structure and depth. Grape verjus and a touch of apple cider vinegar add excitement. This is built upon a herbal and botanical extract of fennel seeds, linden blossoms, mountain pine, juniper berries, sage, mint, and chili. The wine is rounded off with linden honey, which binds the aromas together without overpowering them. Still – intended to be poured like a course at the table.
