Two female founders, one landscape
In 2018, Cornelia Øiestad and Vanessa Krogh founded the Villbrygg brand – with the idea of translating the aromas of Nordic wild plants into beverages. From a kitchen emerged a production that combines enjoyment and a connection to nature: each bottle represents a section of a field, a forest, or a mountaintop.
Harvest, extract, ferment
Villbrygg plans cultivation areas with farmers and organizes harvesting teams; they process certified organic herbs and wild-growing plants. The ingredients are dried, sorted, and macerated for months in warm or cold water – the temperature influences bitterness, floral notes, and depth. Raw cane sugar and lactic acid cultures initiate fermentation into organic acids and complex aromas; the product is then pasteurized and finely carbonated.
Origin & Community
Villbrygg works with organic and wild-harvested ingredients and collaborates with urban gardens and forestry operations. A special feature of the line: Lemongrass is specially cultivated for the forest expression Skog – a farm at the foot of Oslo started the cultivation to ensure the desired freshness and citrusy clarity are rooted in Norwegian origin.
Through Villbrygg's close collaboration with Michelin-starred restaurants, Norwegian lemongrass quickly gained recognition; the company now supplies several of the country's top restaurants. Beyond the individual plant, Villbrygg strengthens a network of wild harvesters – with regulated processes, fair compensation, and reliable purchasing. In this way, the landscape captured in a jar remains more than just an idea; it creates added value locally.
