Chef and spirits enthusiast Erika Ollen develops drinks in Malmö that combine ritual, taste and depth.

Under the name Gnista – Swedish for "spark" – distinctive alternatives with a personal touch are created. Drawing on her experience in the bar scene, she combines flavors like building blocks – constructed for moments that demand clarity and texture.

Building blocks of the depth

Each ingredient has its purpose and measure: rhubarb provides the acidity and creates a framework, oak wood delivers tannins, raisins give body, ginger and habanero add spiciness, wormwood bitterness, and lovage character.

The production of the non-alcoholic spirits combines maceration, steam distillation, infusion, smoking, and filtration; a master blender brings the textures together. This results in structured, dense compositions with a clear line and length.

Two color palettes, one style

In addition to its non-alcoholic spirits, Gnista develops four wine alternatives in two lines: Reds and Blondes. The base consists of fruit juices (including cherry, grape, and rhubarb), fermentation processes, and botanical extracts. Oak and raisins provide structure and tannins; herbs, blossoms, and spices add freshness and length. Complexity is achieved through natural enzymes and botanical extracts. The result: a clear body and vibrant character.
