Alcohol-free spirits, as we understand them, are not diluted distillates or products that have been dealcoholized after the fact. They are created through craftsmanship, not by removing or simply replacing ingredients.

Their depth comes from maceration, distillation, and – depending on the recipe – also fermentation. Botanicals, woods, and spices are extracted, distilled, or smoked in several steps until structure and tension are present in the glass: bitterness, acidity, warmth, and length.

This is how spirits with character are created – crafted from herbs, fruits, and wood, not from alcohol. Sometimes earthy and dark, sometimes fresh and citrusy, sometimes dry and spicy. Designed for lasting rituals – and drinks that make a statement.

OUR PERSPECTIVE

HAZEL feels a bit like a prodigy. Like an unbelievable story that you initially think is made up. When we first smelled the glasses, Lucas and I looked at each other and said, "This can't be real." Former Seedlip founder Ben Branson and his team set themselves the task of creating wood- and grain-based drinks that are "neat," even when not chilled. Like a good whisky, rum, or something similar. And what you find in the glass is exactly that, and so much more. The experience is almost indescribable. For HAZEL, young hazel catkins, leaf buds, and grain are distilled at a gentle temperature; the woods are split and, depending on the profile, roasted, toasted, or lightly charred – this opens up the structure, highlights sweet and spicy toasty notes, and refines the tannins. Maturation is achieved through sonic ageing: In ultrasonic reaction chambers under oxygen, pressure and heat, wood and grain components rapidly interlock with the base – more depth, clear texture, color and length, without the heaviness of a classic long-term barrel aging.

PRODUCTION

For Hazel, young hazel catkins and leaf buds are hand-harvested and distilled at a gentle temperature to preserve their fresh, green notes. The woods used—hazel, silver birch, and English oak—are split and, depending on the desired profile, roasted, toasted, or lightly charred, resulting in sweet, spicy, roasted notes and fine tannins. The whisky is then matured using sonic aging: in ultrasonic chambers, wood and grain components combine with the base under pressure, oxygen, and heat—a rapid, controlled process that creates depth and texture without traditional barrel aging.
