Pét-Nat Teas are naturally sparkling compositions that incorporate traditional sparkling wine production techniques. Finely effervescent, with a very low alcohol content, yet deep and expressive – drinks that gain character over time.

Their base consists of selected teas, herbs, and botanical elements, composed according to structure, texture, and origin. Infused with pure spring water, the leaves, blossoms, and spices unfold effortlessly – clear, precise, and multifaceted.

The heart of this method lies in the fermentation process: a symbiotic culture of bacteria and yeasts transforms sugar into carbon dioxide and subtle acids, reduces sweetness, and creates complexity. Afterwards, the tea rests – often for months, sometimes years – in the bottle to develop depth, tension, and harmony.

OUR PERSPECTIVE

The production process is impressive – and elaborate. The result is a complex, structured cuvée with a delicate shimmer of deep golden yellow. The nose reveals herbs, dried grasses, and fig leaf. On the palate, it is fruity-sweet and salty-mineral – supported by an elegant perlage.

Combuchont - W/O Blanc (2025) BEHIND THE SCENE'S

PRODUCTION

At W/O Blanc, it all starts with Alpine water from the Limestone Alps.
Gyokuro and Oolong are combined and fermented using the estate's own yeast strain. In the second step, the fermented tea is blended with oak-aged tea. For the Blanc, an extract of hand-picked fig leaves complements the aromatic profile. The carbonation develops both naturally and through external input: approximately 40% comes from the Bründlmayer winery, while about 60% is generated through the own fermentation process.

COMBUCHONT was born in the Michelin-starred RAU restaurant in Upper Austria, where top chef Klemens Gold combined the world's finest teas with water from the Limestone Alps, time, and meticulous craftsmanship to create a cold-bottled tea with the longevity of great wines. Nestled in the Pechgraben valley, surrounded by the Limestone Alps, this creation matures for at least 18 months in the world's first tea cellar. A specially cultivated yeast culture lends it structure and remarkable shelf life.
