Wine Proxy

Proxy wines are not dealcoholized wines – and don't intend to be.
They are independent compositions: inspired by wine, but reimagined. Composition instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story.

OUR PERSPECTIVE

Like a salty breeze: Chardonnay and Pecorino come into contact with water kefir, resulting in a very dry, complex, wine-like structure. A mineral mouthfeel is achieved through the extraction of roasted oyster shells, complemented by green notes from gooseberry, dulse, pine needles – and a hint of oak. Enjoy it lightly sparkling or still, and especially well with white fish.

PRODUCTION

Cul Sec Domaine works with grapes from various European regions, blending them with local herbs, woods, and fruits to create complex cuvées. Acidity and tannins are derived from unripe grapes, wood infusions, and natural lacto-fermentation; additionally, pressed grape skins are fermented with water kefir or kombucha cultures to extract the fine tannins and phenols. Aromas are derived from infusions of pear wood, alfalfa, Douglas pine, or blackcurrant leaves—some extractions take weeks, others are created in hydrosonic baths. Thus, each composition evolves from the land, time, and sound into a unique beverage.

Cul Sec Domaine was born out of curiosity about what grows right on our doorstep – twigs, leaves, wood, and fruits gathered in collaboration with Dutch farmers and Food Forests. Each vintage is an experiment in wood, grapes, herbs, and fermentation, driven by precision and a poetic spirit of experimentation. The result is complex, richly textured compositions that make the landscape, the season, and the craftsmanship tangible.
