Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story.

OUR PERSPECTIVE

A full burst of redcurrants (lacto-fermented) hits you right in the face, not at all kitschy, but somehow very sophisticated. Further inhaling reveals green notes of spruce tips (kvass) alongside spicy forest aromas and sweet fig leaf and chamomile (kefir). Of course, it's primarily fruity, but there are so many layers to decipher thanks to the fermentation techniques, which you can only discover with a bit of heightened attention. Incredibly versatile, and equally suitable for food pairing. Especially with seared meat, dark berry desserts, or as a digestif.

MURI - Fade to Black BEHIND THE SCENE'S

PRODUCTION

First, a dark base is created from black and red currants – this provides fruit, depth, and a wine-like structure. Simultaneously, a kefir infused with chamomile blossoms is fermented, contributing subtropical esters and a bright, floral note. This is complemented by a kvass made from caramelized malt, infused with hand-picked spruce needles and fig leaves from the trees surrounding the blendery – for a nutty, herbaceous warmth. In the final step, all three components are carefully blended, allowing the fruit, floral fermentation, and forest notes to coalesce into a clear, multi-layered cuvée.
