Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story.

Anyone who blends Danish sour cherries with lacto-fermented beetroot and ice-clarified tomato water surely has the idea of ​​creating a proxies close to red wine in mind. Holger Schwarz calls it "the perfect Loire Cabernet Franc alternative." This beautifully rounded, mouth-filling—yet still acidic—drink was born from a collaboration with the legendary FOUR HORSEMEN in Brooklyn. It's meaty and juicy.

MURI - Four Horsemen BEHIND THE SCENE'S

PRODUCTION

First, a "wine-like" base is created: Stevnsbær sour cherry provides the dark fruitiness, while ice-clarified tomato water adds a subtle, tart depth. Simultaneously, lacto-fermented beetroot contributes an umami structure, and kefir infused with bay leaf and green peppercorns weaves in herbal and spice notes. Finally, all the components are carefully blended and left to rest in small batches – resulting in a quiet, multi-layered texture.
