Fruit essences are not mass-produced juices, but handcrafted beverages with a gastronomic focus. The harvest time and the fruit's condition are crucial. The goal is not the primary aroma, but a multifaceted drinking experience with depth, clarity, and tranquility.

Production begins with a gentle pressing process that preserves the finesse and structure. Depending on the producer, the essences mature further – in some cases for months or even years – allowing the natural acidity to settle and the texture to gain depth. This results in precise compositions with a clear, clean line and no heaviness.

In the glass, the interplay of sugar and acidity takes center stage: clear fruit, a defined profile, and a lingering finish. The focus is on acidity, fine tannins, and depth. Quince reveals citrus, honey, and spice; cherry brings dark berries and herbal notes; grape spans the spectrum from minerality to floral nuances – present, precise, and distinctive.

PRODUCTION

The wild cherry comes from some over 100-year-old trees on the Kittenberg – a raw material more reminiscent of "old vines" than of classic juice production. Here, too, the principle applies: minimal intervention in the orchard, harvesting at optimal ripeness, and then cold-pressing. The juice is processed without heat treatment, left unfiltered, and bottled without additives to preserve the fruit's natural tannin and acid structure.

Wachstum König is a fruit and wine estate in Kittenberg (Southern Styria), run by Herbert and Karlheinz König, whose trees, some of which are decades old, form the basis of their work. Cultivated biodynamically and harvested with minimal intervention, they produce limited-edition vintage essences from pear, cherry, or quince, characterized by ripeness, vibrancy, and origin. Their processing follows a minimalist approach: cold-pressed and bottled naturally.
