Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story in the process.

OUR PERSPECTIVE

The first time I smelled a glass of No. 5, the aromas catapulted me to markets in countries I'd never visited. China? India? Turkey? It's incredible how much cultural diversity is presented in this drink, conveyed through aromas like orange blossom, jasmine, citron, and bergamot. In fact, white tea and green jasmine tea from China (Fujian) are used for fermentation and complemented with a botanical infusion (bitter orange and bergamot) and verjus from Bordeaux. The drink is intense and often polarizing. But if you find the right moment, or the right dish (tip: lemon tart!) to pair with a glass, you'll find it incredibly rewarding.

Nivers - No. 05 BEHIND THE SCENE'S

PRODUCTION

The base is created from a fermented blend of Jasmine Green Tea and Pai Mu Tan from the mountains of Fujian – a terroir whose mist, high altitude, and temperature fluctuations offer perfect conditions for fine white teas. The Jasmine Green Tea contributes floral, slightly vegetal tension, while the Pai Mu Tan provides a light, silky texture. Botanical extracts of bitter orange leaf, citron, and bergamot are then layered on top. Finally, the macerates, tea base, and verjus are combined and blended in a second fermentation without alcohol production – resulting in a clear, citrusy-floral cuvée.
