Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story.

OUR PERSPECTIVE

I'll never tire of saying that PASSING CLOUDS was one of the drinks that opened my eyes to the no/low world. Since then, it's been one of my all-time favorites, my safe haven. Jasmine is also generally one of my favorite scents, even if it's more subtle in this drink. The green gooseberries and quince kefir are more obvious. The whole thing is underscored with geranium and woodruff kvass. It's fresh, slightly yeasty (probably from the kvass), and incredibly silky. For me, everything in this drink just works, and I can't get enough of it.

MURI - Passing Clouds BEHIND THE SCENE'S

PRODUCTION

The composition begins with a light fermentation of white currants and gooseberries – fresh, floral, with a crisp acidity. Simultaneously, a quince kefir is produced for its creamy, lactic texture, and a malt-based kvass is flavored with geranium and woodruff, adding brioche notes. A cold jasmine tea infusion underpins the delicate floral notes. Finally, all the components are meticulously blended, carbonated, and bottled.
