Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story in the process.

OUR PERSPECTIVE

The base of this incredibly delicate beverage is green tea from Oita Prefecture on the island of Kyushu in Japan. The tea undergoes a fermentation process (using SCOBY) and is then aged for at least six months, resulting in an exceptionally smooth texture. Verjus from Bordeaux and a blend of blackberry leaves, mimosa blossom, and sea oak (Fucus) are added. This combination creates a fruity and herbal flavor profile, imparting a salty-sweet-sour balance and making it an incredibly good accompaniment to white fish.

Nivers - No. 02 BEHIND THE SCENE'S

PRODUCTION

First, high-quality tea ferments for at least six months in stainless steel tanks – this establishes depth, length, and the basic structure. Next come Shiraore and Tamaryokucha, two green Grand Cru teas from the Yabukita cultivar on the island of Kyushu; they contribute umami, freshness, and a delicate, green vibrancy. These are combined with botanical extracts of raspberry leaf, maté, and mimosa. In the final step, macerates and extracts are blended with the fermented base and verjus (green grape juice) before a second, non-alcoholic fermentation unites the components into a clear, multi-layered cuvée.
