Wine Proxy

Proxy wines are not dealcoholized wines – and don't intend to be wines.

OUR PERSPECTIVE

I'm willing to go out on a limb and say that the Arensbak Red is perhaps the closest in aroma and structure to the (natural) wine we carry. It's a rather light wine that should ideally be enjoyed slightly chilled (around 8°C!) to allow its full spectrum of aromas and structure to unfold. The combination of earthy notes from the black Shu Pu'er tea from China's Yunnan tea region, various berries (aronia, etc.), and maceration of oak, juniper, and mushrooms, among other things, creates profoundly complex structures. This is a sommelier's recommendation.

PRODUCTION

Based on black Shu Puerh tea (Yunnan) with kombucha fermentation. In the second phase, aronia berries, black currants, sour cherries, mushrooms, juniper, and licorice are added, followed by the addition of oak chips for depth and tannins.
