Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story in the process.

OUR PERSPECTIVE

I have a weakness for roasted and smoky flavors. For Yamilé, rhubarb was smoked in the old (and thoroughly cleaned) fish-smoking chambers of the production facility in Copenhagen's North Harbour and then lactic acid fermented. A kind of honey mead was created from gooseberries and honey (not vegan!), and all of this was then flavored with goldenrod, angelica root, and pink peppercorn kefir. A perfect example of a Muri creation that can serve wonderfully as a food pairing, but also as an extravagant aperitif.

MURI - Yamilé BEHIND THE SCENE'S

PRODUCTION

For Yamilé, raspberries are first carbon-macerated, creating an intense, clearly structured fruit base. Simultaneously, a honey mead enriched with gooseberries ferments, providing the sweet foundation. A third layer is added by lacto-fermented rhubarb smoked over beechwood, which contributes depth and smokiness. A water kefir infused with goldenrod blossoms, angelica root, and pink peppercorns adds botanical spice. Finally, all components are precisely blended, adjusted for acidity and texture, carbonated, and bottled.
