Pét-Nat Teas are naturally sparkling compositions that incorporate traditional sparkling wine production techniques. Finely effervescent, with a very low alcohol content, yet deep and expressive – drinks that gain character over time.

Their base consists of selected teas, herbs, and botanical elements, composed according to structure, texture, and origin. Infused with pure spring water, the leaves, blossoms, and spices unfold effortlessly – clear, precise, and multifaceted.

The heart of this method lies in the fermentation process: a symbiotic culture of bacteria and yeasts transforms sugar into carbon dioxide and subtle acids, reduces sweetness, and creates complexity. Afterwards, the tea rests – often for months, sometimes years – in the bottle to develop depth, tension, and harmony.

Jin Xuan, also known as "Golden Lily," is a Taiwanese oolong tea often called "Milky Oolong" in Europe. It's a lightly fermented oolong, resulting in a delicate and elegant flavor. This tea is known for its slightly creamy texture and lactic aroma. Fermented with natural yeasts at AMA, it has a silky mouthfeel and, combined with the acidity of the fermentation, creates an incredible interplay of flavors. A touch of delicate caramel and a nutty note accompany this wonderful beverage.

PRODUCTION

AMA No. 4 begins with spring water from the Basque Country and a rare Oolong variety: Golden Lily Milk Oolong from Taitung (Taiwan) – a tea with a natural, creamy-milky appearance, situated between green and black tea.
The tea is infused with Basque spring water and subjected to natural fermentation with carefully selected yeast and bacterial cultures.
After that, No. 4 continues to mature in the bottle – becoming vibrant, refined, with smoother bubbles and a texture that rounds out over time. Aging potential until 2030.
