Dealcoholized wine

Dealcoholized wine begins as a classic wine: harvested, fermented, and aged. Only then is the alcohol removed – usually through vacuum distillation or reverse osmosis. The crucial factor is preserving the volatile aromatic compounds.

In vacuum distillation, the pressure in the tank is reduced so drastically that alcohol evaporates even at low temperatures between 30 and 40 °C. Some of the delicate, heat-sensitive aroma compounds can be preserved in the process, or collected beforehand and subsequently added back in.

Reverse osmosis separates alcohol and water using membranes, allowing for more precise control over body and acidity. What remains is wine in its original structure – with acidity, texture, and origin, but without the intoxication.

OUR PERSPECTIVE

The full-bodied flavor of apple and stone fruit aromas is typical of ripe Riesling grapes from the Palatinate – in this case, one can only speak of "terroir" typicity. At the same time, the residual sugar is superbly balanced by the acidity and fine minerality. An alcohol-free Riesling that is truly enjoyable – and we definitely don't say that about many of its kind.

PRODUCTION

Made from Riesling grapes from the Palatinate region, in the Kabinett style: delicate, fresh, and subtly fruity. After classic vinification, the wine is gently dealcoholized – thus preserving its typical Riesling structure with fine acidity and fragrant aromas.

There's more to I'm Not Full than just a play on words – its creator is reflected in the name. Christopher Full from Mölsheim, at the border of Rheinhessen and the Palatinate, has been developing his own line of distinctive non-alcoholic wines for several years. As cellar master at Battenfeld-Spanier and Kühling-Gillot, as well as at his own winery, his guiding principle is: the sensory standard remains the same – and you can taste it.
