Fruit essences are not mass-produced juices, but handcrafted beverages with a gastronomic focus. The harvest time and the fruit's condition are crucial. The goal is not the primary aroma, but a multifaceted drinking experience with depth, clarity, and tranquility.

Production begins with a gentle pressing process that preserves the finesse and structure. Depending on the producer, the essences mature further – in some cases for months or even years – allowing the natural acidity to settle and the texture to gain depth. This results in precise compositions with a clear, clean line and no heaviness.

In the glass, the interplay of sugar and acidity takes center stage: clear fruit, a defined profile, and a lingering finish. The focus is on acidity, fine tannins, and depth. Quince reveals citrus, honey, and spice; cherry brings dark berries and herbal notes; grape spans the spectrum from minerality to floral nuances – present, precise, and distinctive.

OUR PERSPECTIVE

We discovered two things about Sauvignon Blanc: it needs air and it only gets better with age. If you plan to pour (or drink) the whole bottle in one evening, it's best to decant it like a wine. The more air, the better. Alternatively, you can enjoy half of it immensely and then leave the rest in the fridge for a week. With oxygen, it gradually becomes more like a wine; it's incredible. It just darkens slightly due to oxidation, but that's perfectly fine. We even left a bottle open for several weeks, which was a fascinating experiment – ​​it developed honey and mature notes. It just gets increasingly difficult to be patient towards the end.

PRODUCTION

The Sauvignon Blanc grapes come from top Austrian vineyards and are hand-harvested at full ripeness. Only the first pressing juice – the finest free-run juice – is used. The juice then clarifies naturally, without any filtration or additives, preserving the essence of the skins and pulp. The resulting essence then matures for months in the cool cellars of Pöllau Castle, where it develops its clear structure and precise acid balance.
