Wine Proxy

Proxy wines are not
Dealcoholized wines – and they don't even want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story.

OUR PERSPECTIVE

I might be a little biased towards Bouche – perhaps due to my connection to my hometown. But when Walker, the founder, told me they were working with white tea and vacuum distillation for the next Proxy E, I was already a fan before I even received the bottle.

White tea is light, almost delicate. I really like that. If you close your eyes after a glass of white tea, you could imagine yourself surrounded by blossoming apricot trees. I have a similar experience with Proxy E. The gentle fermentation creates a playful acidity. This is balanced by the fermented honeycomb, which is by no means sweet. The sage component gives the drink a subtle herbal note. Everything seems very finely interwoven and not at all loud.

PRODUCTION

PROXY E begins with a fermented infusion of Snow Bud white tea. Fermented honeycomb is added for warmth and resinous depth, silverberry for acidity and tannins. Sage, a vacuum distillate, is incorporated to establish the woody-aromatic structure.
