At the heart of our wines are high-quality fruit juices, sourced exclusively from artisanal producers. These juices provide primary aromas – grape, citrus, or apple – and form the backbone of the composition. They are complemented by extracts of wood, herbs, or blossoms, and sometimes by subtle acidity enhancers or tinctures. This creates depth, complexity, and a long finish, without fermentation taking center stage.

Direct quince juice forms the fruit base; rosemary, ginger, and cardamom are added as extracts and blended with verjus to create a rich, invigorating flavor. It is then lightly carbonated and piping hot in a water bath – ensuring preservation without preservatives.
