Kombucha

Infusions of green, oolong, or black tea form the base; a SCOBY – a symbiotic culture of bacteria and yeast – first ferments the added sugar into alcohol, which acetic acid bacteria then further convert into organic acids. This process creates tension, acidity, and a fine, vibrant texture. The caffeine contained in the tea is lost during fermentation.

Depending on the style, a second fermentation uses a composition of fruits and their juices, herbs, hops or wood to add accents and sharpen the signature.

Fermentation doesn't have to be limited to tea: More and more producers are working with herbal infusions (tisanes), coffee, or even dealcoholized wine. This opens up new possibilities – unique and aromatically diverse.

OUR PERSPECTIVE

As a child, I often traveled to northern Germany – and from these trips, I brought back sea buckthorn in all its forms: jam, candies, gummy bears, and more. In Austria, however, you rarely encounter this fruity-tart berry. Perhaps that will change with FOLK's Sea Buckthorn Kombucha.

Kombucha already has its own acidity from fermentation, creating an intriguing interplay here. Not challenging, but clearly defined – you should enjoy acidity. Orange zest opens up an almost Fanta-like approach, albeit with considerably more sophistication. A successful interplay of fruit and precise acidity.

FOLK - Sea Buckthorn BEHIND THE SCENE'S

PRODUCTION

The base is a nutrient-rich tea made from Chun Mee green tea and lemon verbena, brewed at 76°C. The tea is fermented with a starter culture at a constant 24°C for about a week. Afterward, the kombucha is transferred to a pressure tank, centrifuged, and coarsely filtered. It is then cooled to 3°C and sea buckthorn is infused under pressure (using a HopGun). Finally, CO₂ is incorporated in a controlled manner to ensure consistent effervescence.
