Kombucha

Infusions of green, oolong, or black tea form the base; a SCOBY – a symbiotic culture of bacteria and yeast – first ferments the added sugar into alcohol, which acetic acid bacteria then further convert into organic acids. This process creates tension, acidity, and a fine, vibrant texture. The caffeine contained in the tea is lost during fermentation.

Depending on the style, a second fermentation uses a composition of fruits and their juices, herbs, hops or wood to add accents and sharpen the signature.

Fermentation doesn't have to be limited to tea: More and more producers are working with herbal infusions (tisanes), coffee, or even dealcoholized wine. This opens up new possibilities – unique and aromatically diverse.

Possibly Folk's flagship kombucha, and rightly so. Sour cherries (“surkirsebær” in Danish, “sour cherry” in German) take center stage here, in the absence of the acetic acid typical of kombucha. Multi-layered and complex, without sweetness or kitsch. Vibrant and unpasteurized. An all-day drink, whether enjoyed on the go as a refreshing drink straight from the bottle, at brunch on ice, or in a wine glass in the evening.

FOLK - Sour Cherry BEHIND THE SCENE'S

PRODUCTION

The base is a sweetened tea made from Chun Mee green tea and lemon verbena, brewed with filtered, softened water (at 76°C) and unrefined cane sugar. Fermentation takes place in a tank with starter culture at 24°C for about a week, with close monitoring. The kombucha is then centrifuged in a pressure tank, coarsely filtered, cooled to 3°C, and sour cherry is infused under pressure (HopGun). Finally, CO₂ is gently released to create a consistent, fine effervescence.
