Fruit essence

Fruit essences are not off-the-shelf juices, but artisanal beverages with gastronomic aspirations. The timing of the harvest and the state of the fruit are decisive. The goal is not the primary aroma, but a multi-layered drinking experience with depth, clarity, and composure.

Production begins with gentle pressing, which preserves finesse and structure. Depending on the producer, the essences continue to mature—at some houses for months or even years—so that the natural acidity settles and the texture gains depth. This results in precise compositions with a clear line, devoid of heaviness.

In the glass, the interplay of sugar and acid takes center stage: clear fruit, a drawn-out line, and a lasting finish. The focus is on acidity, fine tannin, and depth. Quince displays citrus, honey, and spice; cherry brings dark berries and herbal accents; grape spans the spectrum from a mineral vein to floral nuances—present, precise, and distinct.

OUR PERSPECTIVE

Blaufränkisch is one of the grape varieties I find particularly exciting – not least because of its acidity. That is precisely what takes center stage here. Cranberry, pomegranate, and black elderberry open up the glass, followed by cherry and sour cherry with their interplay of fruit and acidity.

Added to this is a floral, slightly spicy side that reminds me of violets. Despite the natural sweetness, the Blaufränkisch remains lively and has plenty of tension. For me, this is above all a wine for the table: with mushrooms, beetroot, or heartier, earthy dishes.

Flein - Blaufränkisch (2025) | Organic BEHIND THE SCENES

PRODUCTION

The Blaufränkisch is produced in collaboration with the Weninger family in Horitschon. The grapes grow in organically cultivated Blaufränkisch vineyards in Central Burgenland, selected specifically for Flein. There, the 15 to 35-year-old vines stand on calcareous loam and clay soils and are harvested entirely by hand.

After the harvest, Maria & Michael Groß take over. The grapes are pressed particularly gently – following the same principle used in champagne production. The juice is cold-filled and then pasteurized gently. No fermentation takes place. This preserves the fruit, natural acidity, and the distinct character of the Blaufränkisch as directly as possible.
