Fruit essences are not off-the-shelf juices, but artisanally crafted beverages with gastronomic aspirations. The timing of the harvest and the condition of the fruit are decisive. The goal is not the primary aroma, but a multi-layered drinking experience with depth, clarity, and composure.

Production begins with gentle pressing, which preserves finesse and structure. Depending on the producer, the essences continue to mature—at some houses for months or even years—so that the natural acidity settles and the texture gains depth. This creates precise compositions with a clear line, devoid of heaviness.

In the glass, the interplay of sugar and acidity takes center stage: clear fruit, a drawn-out line, and a lingering finish . The focus is on acidity, fine tannin, and depth. Quince shows citrus, honey, and spice; cherry brings dark berries and herbal accents; grape spans the arc from a mineral vein to floral nuances—present, precise, and distinctive.

OUR PERSPECTIVE

Flein demonstrates quite impressively how much character can be found in grape juice when it is treated with the same attention as wine from the very beginning. With the Fizz Blanc, I particularly like the interplay between juicy fruit and acidity: citrus and melon open the first sip, followed by pear and green apple.

The carbonation adds extra tension and lightens the natural fruit sweetness. This keeps the Fizz Blanc light, fresh, and surprisingly animating – for me, it is primarily a very lovely aperitif, but also uncomplicated enough for a long dinner table.

Flein - Fizz Blanc | Organic BEHIND THE SCENES

PRODUCTION

For Flein, the organic grapes are intentionally harvested early—at a point when fruit and ripeness are already present, but the natural acidity still provides tension. After being hand-picked, the grapes are pressed with exceptional care. Only about 55% of the potential juice is extracted, ensuring the must remains clear and refined, with as few bitter substances from the skins and seeds as possible.

The grape juice is then cold-bottled, briefly pasteurized, and rapidly cooled down again. No fermentation takes place. Finally, carbonation is added to the Fizz Blanc—nothing else. This preserves the immediate character of the grape in the glass: juicy fruit, lively acidity, and a fine perlage.
