Fruit essences are not off-the-shelf juices, but artisanal beverages crafted with gastronomic aspirations. The timing of the harvest and the condition of the fruit are decisive. The goal is not the primary aroma, but a complex drinking experience characterized by depth, clarity, and composure.

Production begins with gentle pressing, which preserves finesse and structure. Depending on the producer, the essences continue to mature—at some houses for months or even years—allowing the natural acidity to settle and the texture to gain depth. This results in precise compositions with a clear profile, devoid of heaviness.

In the glass, the interplay between sugar and acidity takes center stage: clear fruit, a defined line, and a lingering finish. The focus is on acidity, fine tannin, and depth. Quince reveals citrus, honey, and spice; cherry brings dark berries and herbal accents; grape spans the spectrum from a mineral vein to floral nuances—present, precise, and distinct.

OUR PERSPECTIVE

Sauvignon Blanc and South Styria—for me, they simply belong together. It is all the more exciting, therefore, to see how clearly the grape variety expresses itself here: gooseberry, lime, and green apple meet lemon balm, young pea pods, and a fine herbal spice.

For me, the acidity is once again the deciding factor. It is taut, lively, and provides a clear counterpoint to the natural sweetness. This is complemented by lemon zest and a slightly salty note, which allow the Sauvignon Blanc to finish with astonishing precision. Among the "stillen Fleins" [still wines], it is for me one of the most straightforward—and a very good companion at the table.

Flein - Sauvignon Blanc (2025) | Organic BEHIND THE SCENES

PRODUCTION

The Sauvignon Blanc grapes are grown in select vineyards in Southern Styria and Štajerska Slovenija – the border region that Maria and Michael Gross call home. The 15 to 45-year-old vines grow in steep vineyards at an altitude of 350 to 400 meters above sea level. Here, Alpine and Mediterranean influences meet lean, calcareous marl soil. Tending and harvesting are done entirely by hand.

After harvesting, the grapes are pressed with exceptional gentleness – following the same principle used in Champagne production. The juice is cold-filled and subsequently pasteurized using a gentle technology. No fermentation takes place. This preserves the very characteristics that define Sauvignon Blanc in this region: green aromatics, herbal spice, and a lively, natural acidity.
