Dealcoholized wine

Dealcoholized wine begins as a classic wine: harvested, fermented, and aged. Only then is the alcohol removed – usually through vacuum distillation or reverse osmosis. The crucial factor is preserving the volatile aromatic compounds.

In vacuum distillation, the pressure in the tank is reduced so drastically that alcohol evaporates even at low temperatures between 30 and 40 °C. Some of the delicate, heat-sensitive aroma compounds can be preserved in the process, or collected beforehand and subsequently added back in.

Reverse osmosis separates alcohol and water using membranes, allowing for more precise control over body and acidity. What remains is wine in its original structure – with acidity, texture, and origin, but without the intoxication.

OUR PERSPECTIVE

What I currently find exciting about the Arioso is that we can now follow the Riesling across two vintages.

The 2024 appears somewhat riper and more accessible, while for me, the 2025 feels cooler, more straightforward, and even more precise. The bright fruit remains, but for me, the 2025 focuses more on tension. Stone fruit meets a lively acidity and a fine spice; at 1.8 grams of sugar per 100 milliliters, it remains pleasantly dry. This gives it clarity and a long, juicy pull.

Anyone familiar with the 2024 can discover here very nicely how a new vintage makes a difference. And that is exactly what makes the Arioso particularly interesting to me: Riesling, origin, and vintage do not remain just information on the label even after dealcoholization, but become tangible in the glass.

Reckendorfer - Riesling Arioso BEHIND THE SCENES

PRODUCTION

Organic grapes from a designated vineyard in the Weinviertel region are fermented using traditional methods. Dealcoholization is achieved through reverse osmosis: a membrane separates the water and alcohol from the aromatic core of the wine; the aromatic component is then blended back into the wine with water. Finally, a touch of CO₂ is added.
