Wine Proxy

Proxy wines are not dealcoholized wines – nor do they wish to be seen as such. They are independent compositions: inspired by wine, yet reimagined. Creation instead of extraction.

Their complexity is derived from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like a modular system to form multi-layered structures. The result: a beverage that resembles wine in structure, depth, and aroma – often entirely without grapes.

The focus is on acidity, texture, tannin, and length, supported by fine balance and controlled sweetness. The best proxy wines can do what great wines do: accompany food, open up flavors, stimulate – and in doing so, tell their own story.

OUR PERSPECTIVE

PROXY F is, for me, one of the most unusual BOUCHE proxies yet. The base of aged Pu-erh immediately brings a dark, earthy depth. Layered over that is Szechuan pepper with its slightly electrifying tingle, while ginger contributes freshness and a cool heat.





What I find particularly exciting, however, is the soy sauce. You don’t taste it as an individual ingredient – rather, it gives the drink weight and umami. Together with the effervescence, this creates a highly structured, fresh, and spicy proxy that, for me, belongs firmly at the table. It truly comes into its own when paired with bold Asian cuisine or fried dishes.

PRODUCTION

For PROXY F, BOUCHE uses aged Pu-Erh tea, which is first cold-brewed and then fermented with a culture of yeast and bacteria. Sichuan pepper and ginger juice add spice, freshness, and heat to the composition; soy sauce is used strategically for added depth and umami. Carbonation finally gives PROXY F its fine effervescence. It is brewed and fermented in Berlin.
