Sometimes elegant, sometimes voluminous. Sometimes dry, sometimes with a hint of sweetness. And then, surprisingly floral again—almost like a stroll through distant tea gardens. Sparkling teas combine clarity and depth; they are lively, finely structured, and carried by the tension of their perlage.

Their base consists of high-quality teas—black, green, oolong (Camellia sinensis)—or so-called tisanes, which are regional herbs composed with blossoms, peels, and botanical elements. Temperature and time determine the precision, allowing fragrance and texture to be released without bitter substances dominating. Some blends are balanced with fine fruit juice or a subtle touch of sugar to create volume and length. Unlike wine proxies, their character is not derived from fermentation.

Then follows what defines sparkling tea: carbonation—not as an effect, but as architecture. It opens up the structure and releases aromas. The result is beverages that are free to play: from mineral and straightforward to warm, tart, or floral.

OUR PERSPECTIVE

Herbal Garden comes alive for me through the interplay between green freshness and warm herbal spice. Green tea provides a grassy, delicately tart base, while Greek mountain tea adds notes of lemon, mint, and a hint of cinnamon. These are joined by ripe apple and citrus, while lavender and linden blossom gently pull the aromatics toward the floral.

I find the structure particularly beautiful: grape skins and seeds provide tannin and a fine grip, without stripping the drink of its lightness. The lively perlage keeps everything in motion—a very clear, versatile sparkling tea for the table.

PRODUCTION

Herbal Garden begins with green tea and Greek mountain tea as an aromatic base. These are complemented by herbs and fruits; lavender and linden blossom introduce floral and delicately spicy layers. Grape skins and grape seeds from our own organically farmed vineyards provide tannins and bitter compounds, giving the cuvée its structure.

The individual components are combined into a tea cuvée and carbonated.

La Maison Tea Royal is created in Southern Styria, bearing the shared signature of three winemakers: Bernhard Schauer, Johannes Firmenich, and Stefan Schauer. At its heart are select teas, herbs, and blossoms, complemented by grape skins and seeds from their own organically cultivated vineyards. These add tannin, bitterness, and structure to the delicately sparkling cuvées. Green, black, or white tea gives each bottling its own character—ranging from fresh and herbal to floral and profound.
