We all know what evergreens are. Classics, usually of a musical nature. They always work – and that’s why they’re always playing somewhere.

With my selection, however, you can take the "green" a little more literally. Not because the drinks are green, but because they have a green character: sometimes with lychee and hops, sometimes with Greek mountain tea and herbs, sometimes with green tea and lemongrass.

And even though there is a newcomer among them, I am fairly certain: these are three drinks that always work.

PICK #1

FERAL – NO 1

When it comes to No 1, I now almost reflexively think: it always works. The base of fermented white beetroot sounds wilder than it tastes in the glass. Lychee, elderflower, and white peach make it bright and floral; hops and Sichuan pepper provide spice, grip, and length.

Quiet, precise, and with a present body. For me, an all-rounder at the table – with asparagus, light fish and vegetable dishes, or simply on its own.

LA MAISON TEA ROYAL – HERBAL GARDEN NO. 9

The newest addition to the bundle comes from Southern Styria. Green tea and Greek mountain tea form the foundation, complemented by Mediterranean herbs, ripe citrus fruits, juicy apple, and a touch of hayflower.

The perlage is intense, yet the presentation remains elegant. A sparkling tea that works just as well as an aperitif as it does with salads, grilled vegetables, or a light meal. Accessible, but by no means arbitrary.

AMA – LEMONGRASS

One I keep coming back to. Spring water from the Basque Country meets green tea and hand-harvested lemongrass. Natural fermentation creates a fine effervescence that carries the citrus character without being overpowering.

Dry on the palate, slightly saline, and with a gently tart finish. A very clear aperitif – for hot summer days or crisp autumn days when you want to invite a little bit of sunshine in.
