Alcohol-free spirits, as we understand them, are not diluted distillates or products that have been dealcoholized after the fact. They are created through craftsmanship, not by removing or simply replacing ingredients.

Their depth comes from maceration, distillation, and – depending on the recipe – also fermentation. Botanicals, woods, and spices are extracted, distilled, or smoked in several steps until structure and tension are present in the glass: bitterness, acidity, warmth, and length.

This is how spirits with character are created – crafted from herbs, fruits, and wood, not from alcohol. Sometimes earthy and dark, sometimes fresh and citrusy, sometimes dry and spicy. Designed for lasting rituals – and drinks that make a statement.

OUR PERSPECTIVE

At first glance, Albedo appears to be essentially a non-alcoholic anise gin, which can be enjoyed neat on ice, with a splash of water, or in the perfect serve with dry tonic. Fennel seeds, star anise, and juniper take center stage, and in tonic, they are reminiscent of an aromatic New Western (dry) gin. Neat, it has a sweeter taste. The resulting cocktail recipes are numerous.

PRODUCTION

The essence begins with the selection of the finest botanicals – aniseed, star anise, cardamom, and cloves are the dominant ingredients. The plant substances are extracted in a three-stage process: ancient alchemical recipes combined with modern technology create the "primal essence." First, there is an intensive extraction and hydro-distillation, followed by targeted tincture production, and finally a gentle reduction to concentrate the aromas.
