Alcohol-free spirits, as we understand them, are not diluted distillates or products that have been dealcoholized after the fact. They are created through craftsmanship, not by removing or simply replacing ingredients.

Their depth comes from maceration, distillation, and – depending on the recipe – also fermentation. Botanicals, woods, and spices are extracted, distilled, or smoked in several steps until structure and tension are present in the glass: bitterness, acidity, warmth, and length.

OUR PERSPECTIVE

Citrusy and slightly bitter, this Amaro evokes the citrus season as well as the height of summer. Mixed with non-alcoholic sparkling wine, it resembles a Limoncello Spritz; with tonic, it takes on bitter wormwood notes. It contains plenty of lemon zest, angelica root, and coriander seeds. We like to use it in light cocktails that capture its delicate aromas.

AMARO HIGHBALL

5 cl OPIUS Amaro
2 cl elderflower syrup
1 cl lemon juice
10cl Aqua Monaco Golden Tonic
fresh mint or lemon zest

Combine Amaro, elderflower, and lemon in a mixing glass, stir over ice until chilled, and strain into a coupe glass. Top with tonic water and garnish with mint or lemon zest.

Selected plants rich in bitter and herbal flavors form the basis – such as wormwood, bitter orange peel, and select floral herbs. In a three-stage process, these are first extracted, then refined in an alchemical phase, and finally blended together in a long release process.
