Alcohol-free spirits, as we understand them, are not diluted distillates or products that have been dealcoholized after the fact. They are created through craftsmanship, not by removing or simply replacing ingredients.

Their depth comes from maceration, distillation, and – depending on the recipe – also fermentation. Botanicals, woods, and spices are extracted, distilled, or smoked in several steps until structure and tension are present in the glass: bitterness, acidity, warmth, and length.

PRODUCTION

Wormwood, green herbs, and citrus zest are macerated individually, some are steam-distilled, and then blended in small batches. Oak (for tannins) and rhubarb (for acidity) are among the botanicals used to add body and length.
