I must confess that it took me some time to embrace or understand the very delicate character of the Combbuchont. The complexity and subtlety of the tea are showcased to their best advantage here, and it definitely requires some effort to appreciate. Klemens and Magdalena Gold's latest addition is the "Rosé" – the tea base is Japanese Gyokuro and Chinese Oolong. And then they add an extract of their own homegrown Shiso. Wonderful.

Back to No. 4: my current favorite when it comes to "red" proxies. Powerful and elegant, endlessly drinkable, perfect for just about any culinary occasion in winter. With its classic lacto-fermented base, it combines lavender, wild blueberries, and juniper.
