Proxy wines are not dealcoholized wines – and don't intend to be wines.
They are independent compositions, perhaps inspired by wine, but reimagined. Composition instead of withdrawal.

OUR PERSPECTIVE

For Arensbak's still proxies, one might want to approach the topic like natural wine. I often feel that these drinks appeal more to (former) wine drinkers than to those who have never really drunk wine or other alcoholic beverages. This probably has something to do with the relatively high acidity and low sugar. Well chilled, the quince and lemon thyme in the WHITE combine so wonderfully in an ethereal spiciness that one longs for fresh salads and warm summer days. But as with the other Arensbak drinks: nothing is obvious; everything is so intricately layered that the drink presents itself as a unified whole, reminiscent of everything but simply of quince and lemon thyme.

PRODUCTION

A base of Oolong tea (Fujian) is fermented (Kombucha fermentation); then infusions with quince, melon, lemon thyme and marigold are added, followed by oak contact through wood chips for a fine vanilla note.
