PRODUCTION

From Grüner Veltliner, Merlot, and Zweigelt grapes, wine is first produced, which is then gently dealcoholized and blended with fresh grape juice. This is followed by kombucha fermentation, which shapes the structure and balance of acidity. Hibiscus, rosehip, and alpine herbs—including nettle, yarrow, calendula, mallow, elderflower, and lemon balm—further enhance the profile; Mühlviertel hops round it off with a delicate bitterness.
